it becomes a sweet and strong Acetum, to be preferred over all others, such that there is clearly no need for vinegar made from wine, beer, honey, and tree fruits. Therefore, for the student of sweet condiments and sauces necessary for meat and fish, and of tasty cheese and butter, we will show the way to prepare them with the same aid of Sal, by which he can prepare various condiments for culinary use as he pleases. Having shown this, we will proceed to the description of metallic condiments.
Whoever is desirous of a good condiment or sauce suitable for meats and fish will find nothing more apt or suitable than a well-prepared and rectified Salis Spiritus spirit of salt, which he will be able to prepare at his own discretion and for his own palate with sugar or any herbs and spices he may wish. For example: just as otherwise very pleasing broths are wont to be prepared from wine or vinegar, pepper, and other spices, to be added to roasted or boiled meats and fish themselves, to be poured over, or to be placed in other small dishes so that all such foods may affect the palate with a more pleasant flavor: so too the same can be achieved with Salis Spiritus, and indeed far more conveniently and better than if wine or vinegar were used to prepare these condiments of pleasant flavor. I speak here of my Salis Spiritus, which, prepared according to my prescription, possesses the highest sweetness, and not of that which is sold in pharmacies and other such merchant shops
