It is also yellow in color and contracts the tongue with a sharp constriction, when nevertheless it ought to be clearer and more transparent than spring water, and should surpass the juices of apples, grapes, or lemons with its sweet acidity. Equipped with such a sweet juice of Sal, I have no need of wine, vinegar, or the other acidic juices of grapes, currants original: "uvarum crisparum", sorrel original: "acetosa", and the like, with which I might procure a sweet and pleasant flavor for meats or fish, since this can be achieved far better and more conveniently with this good Salis Spiritus than with wine or vinegar. A good, I say, and true Salis Spiritus prepared according to the method I have prescribed, not that common one which is sold in the shops of pharmacists and merchants, usually badly prepared, obtaining an unpleasant taste, sharp, yellow in color, constricting the tongue, and exciting vomiting if it has been swallowed; when nevertheless it ought to be limpid and clearer than spring water, and should surpass the juices of apples, grapes, and lemons with its sweet acidity. Since, therefore, such a pure and sweet Succus Salis juice of salt is available to me, there is no reason why I should labor with the juices of wine, vinegar, grapes, currants, wood sorrel original: "oxalis", or the like, to render meats and fish tasty and sweet; for that Salis Spiritus performs the functions of all those, subject to no corruption at all as the other juices are, but
